Emeril’s Cajun Rub
8 tablespoons paprika
3 tablespoons cayenne
5 tablespoons freshly ground black pepper
6 tablespoons garlic powder
3 tablespoons onion powder
6 tablespoons salt
2 1/2 tablespoons dried oregano
2 1/2 tablespoons dried thyme
Combine all ingredients. Yield 2 cups
Mole Rub
1 tbsp Ancho powder
1 tbsp sweet paprika
2 tsp ground cumin
1 tsp black pepper
1 tsp dried oregano
1 tsp cocoa powder
1 1/2 tsp dark brown sugar
1 tsp granulated sugar
1 tsp kosher salt
Combine all ingredients – Yield about 1/2 cup
Ancho Chili Rub
1/4 cup paprika
1 cup ancho powder
1 1/2 tbsp ground cumin
1 tbsp ground coriander
1 1/2 tsp cayenne
2 tsp dry mustard
2 tsp dried oregano
1 tbsp kosher salt
1 tsp black pepper

3 T chipotle powder (from 4t)
2 t ground clove
3 T thyme
3 T black pepper
