9 oz sugar
8 egg yolks
3 c half & half
2 t vanilla extract (or 1 t essential oil)
1 c heavy cream
scald cream and half & half
whip egg yolks
slowly add sugar to eggs, whisking continually (to ribbon stage)
temper milk into eggs by slowly adding 1/3 of liquid while stirring
Slowly bring to 170∞ over low heat
allow to cool off heat, once cool add vanilla (or other flavor)
chill to 40∞
use ice cream maker…
