Turkey Posole soup

7-8c Turkey stock
2x15oz cans hominy, drained and rinsed
3-4 tomatoes, seeded & diced (use a can if not in season)
3-4 garlic cloves, chopped
1-2 large jalapeno peppers, sliced
4-6 c shredded turkey (pulled from the carcass)
1/4c cilantro leaves, coarse chop

Cook the stock, hominy, tomatoes, garlic and jalapenos over med-high+ heat for ~30 mins
Add the turkey and cilantro and simmer until heated through
Season with salt as needed

Ladle into bowls and serve with:
Red chili paste (see below)
Warm corn tortillas
Chunk-chopped radishes
Chunks of avocado
Jack cheese
Diced white onion
Additional jalapeno
…and anything else that sounds good J
